Cream of Asparagus Soup

Serves: 4-6

Ingredients
1 pound Asparagus (ends trimmed off)
1 teaspoon Salt
3 tablespoons Salted butter
1/2 of an Onion (finely chopped)
2 cloves Garlic (minced)
3 tablespoons Flour
2 cups Half and half
1/2 teaspoon Ground coriander
Pepper to taste
Fresh herbs to taste

Step by Step Instructions
  1. Put 2 cups of water into a pot and fit in a steamer basket. Add the asparagus for 3 to 4 minutes. Pour the water into a measuring cup and add enough to equal 2 cups then set aside.
  2. Trim the tips off of the asparagus and halve them lengthwise. Toss the tips with salt and set them aside to use as garnish.
  3. Put the rest of the asparagus into a blender with 1 cup of the cooking water. Blend until very smooth.
  4. Melt the butter in a pot over medium heat, then add the onion and cook for 3 to 4 minutes. Add the garlic and cook for 30 seconds. Sprinkle in the flour and mix it in.
  5. Slowly whisk in the half & half and the remaining cooking water. Season the mixture with salt and coriander and bring to a simmer. Cook, stirring occasionally for 10 to 15 minutes.
  6. Stir in the asparagus puree, and add additional seasonings to taste (salt, pepper, coriander, and herbs) if desired. Serve the soup garnished with asparagus tips.
