Chickpea and Kale Curry

Ingredients
2 teaspoons Olive oil
1/2 cup Bell pepper (chopped)
1/3 cup Onion (chopped)
3 cups Kale (chopped)
2 teaspoons Garlic (minced)
1 teaspoon Curry powder
1/2 teaspoon Ground ginger
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 tablespoon Creamy peanut butter
1 1/2 cups Unsweetened refrigerated coconut milk
1 cup Chickpeas
1 tablespoon Lime juice
1 cup Cooked quinoa
2 tablespoons Fresh cilantro sprigs

Step by Step Instructions
  1. Heat the oil in a skillet over medium heat and cook the onion and pepper stirring for 5 minutes, then add the kale and garlic and cook stirring for 2 minutes.
  2. Add the curry powder, ginger, salt, and pepper and stir to mix them in. Add the peanut butter and stir constantly for 30 seconds.
  3. Stir in the coconut milk and chickpeas and let cook (stirring occasionally) for 12 to 14 minutes. Remove from heat and stir in the lime juice.
  4. Serve the curry over quinoa and topped with fresh cilantro.
