Fried Mahi Mahi

Ingredients
1 cup Breadcrumbs
1 tablespoon Mexican fiesta spice mix
Salt & Pepper to preferance
1 or 2 Eggs (beaten)
1 cup Flour
2 Mahi Mahi fillets (cut into long strips)
Lemon wedges (for serving)
Vegetable oil for frying
SAUCE INGREDIENTS:
1/4 cup Mayonnaise
1 tablespoon Sriracha Sauce
2 teaspoons Lemon juice
2 teaspoons Soy sauce

Step by Step Instructions
  1. Mix the breadcrumbs, Mexican seasoning, salt, and pepper together in a bowl. Beat the eggs in a 2nd bowl. Pour the flour into a 3rd bowl.
  2. Cover the strips in flour, soak them in the egg mixture, then cover both sides with breadcrumb mixture.
  3. Heat the oil to 350 degrees and fry the strips in batches for 3 or 4 minutes on each side. Set the finished strips aside on a paper towel lined plate or wire rack to drain.
  4. Mix all of the sauce ingredients together, then serve the strips and sauce.
