Carrot Tea

Vegan!

Ingredients
2 large Carrots (washed, but not peeled)
5 cups Water
1/2 ounce Knob of ginger (uneeled)
Celtic sea salt to taste (for a savory tea)
Maple syrup (for a sweet tea)

Step by Step Instructions
  1. Put the carrots and the water in a saucepan and boil uncovered for 20 minutes. Add the ginger, cover the pan and boil for 10 minutes more.
  2. For a savory version, pour the tea into a mug and add a bit of salt to taste.
  3. For a sweet version: drizzle maple syrup to the saucepan of tea, then let the tea cool, pour it into an airtight jar, and put it into the fridge to cool further. Serve this version iced.
