Beet Gratin

Vegetarian!

Ingredients
1 bunch Beets (with greens)
1 tablespoon Olive oil
2 large Cloves of garlic
3 Eggs
3/4 cup Milk
1/3 cup Chives (chopped)
4 Scallions
Salt & pepper to taste
2 ounces Mozzarella Cheese

Step by Step Instructions
  1. Preheat oven to 300 degrees and wrap the beets in aluminum foil. Roast the beets, then slice them into rounds once they have cooled.
  2. Blanch the beets by boiling a pot of water, submerging them for 1 minute, then dunk them into a bowl of ice water. Drain away the ice water.
  3. Heat the oil over medium heat in a frying pan, then add the garlic and beet greens and cook for 3 minutes.
  4. Mix the eggs, milk, chives and scallions together, then pour the mixture into a casserole dish. Stir in the greens & sliced beets. Season to taste and sprinkle mozzarella over the top.
  5. Preheat oven to 375 degrees, then bake for 40 minutes. Let cool for 10 minutes, then slice.
