Carrot & Mustard Slaw

Vegan!

Ingredients
1 Red onion (sliced)
1 1/2 tablespoons Dijon mustard
2 tablespoons White wine vinegar
1 tablespoon Capers
1/3 cup Olive oil
Salt & Pepper to taste
1 pound Carrots (shredded)
2 stalks Celery (thinly sliced)
1/4 up Fresh dill (chopped)

Step by Step Instructions
  1. Soak the sliced onion in water for 15 minutes. Drain out the water, then whisk in the mustard, vinegar, capers, olive oil, salt, and pepper in a bowl with the onions.
  2. Toss the onion mixture with shredded carrots, sliced celery, and chopped fresh dill, then serve!
