Corn Salsa

Vegan!

Ingredients
3 ears Corn
1 cup Cherry tomatoes (chopped)
OR use 1 large chopped up tomato
2 Jalapeno peppers (cored or whole)
OR 1 bell pepper
1 small Red onion (diced)
2 cloves Garlic (minced)
Juice from 2 limes
Salt & pepper to taste

Step by Step Instructions
  1. Boil the corn cobs in a pot of water for 4 to 5 minutes, remove them from the water and let cool, then slice off the kernels.
  2. Put the corn and all of the other ingredients into a bowl and mix everything together.
  3. Taste and adjust seasoning if needed, then serve!
