Ingredients
1 pound Cavatappi shell pasta
1/4 cup Unsalted butter
1/2 cup Flour
3/4 teaspoon Salt
1/2 teaspoon Pepper
1 cup Milk
1 1/4 cups Heavy whipping cream
1 cup Shredded sharp cheddar cheese
1 cup Shredded Mozzarella cheese

Step by Step Instructions
  1. Cook the noodles in a large pot as the package directs until they are al dente. Drain the pasta and set it aside.
  2. Melt the butter in a medium-sized pot, then whisk in the flour, salt, and pepper. Slowly add the milk & heavy cream, whisking everything until fully combined. Heat the mixture over medium heat until it bubbles.
  3. Reduce the heat and mix in both of the shredded cheeses. Once they have melted stir in the pasta (add a small amount of additional milk if the sauce is too thick).
  4. Let sit for 5 minutes to thicken and set, then serve.
