Sweet Potato & Sausage Casserole

Ingredients
3 large handfuls Chopped kale (stems removed)
1 tablespoon Avocado oil
3 Sweet potatoes (sliced into 1/8 inch slices)
1/2 pound Ground sausage
2 teaspoons Minced garlic
2 teaspoons Arrowroot
1 cup Coconut milk
1 tablespoon Rosemary
Salt & pepper

Step by Step Instructions
  1. Preheat oven to 400 degrees. Place the kale in an even layer into a 8 by 8 Pyrex dish and gently knead the leaves with the avocado oil.
  2. Cover the kale with 3 even rows of sweet potato slices and set the dish aside.
  3. Brown the sausage in a saucepan, then add the minced garlic and let cook for 1 minute. Mix the coconut milk, arrowroot and rosemary together in a measuring cup, then add the mixture to the saucepan. Whisk everything together until thickened and season to taste.
  4. Remove the saucepan from the heat and pour the mixture over the top of the sweet potatoes. Cover the top of the dish with foil, then bake for 30 minutes, then remove the foil and bake for 10 more minutes.
