Sweet Potato Broth

Serves: 6 cups
Vegan!

Ingredients
2 tablespoons Olive oil
1 medium sized Onion (sliced)
3 ribs Celery (chopped)
1 Carrot (chopped)
1 large Sweet potato (peeled & quartered)
5 whole Cloves
Salt & pepper
6 cups Water

Step by Step Instructions
  1. Heat the oil in a stockpot over medium heat, then add the onion, celery, and carrot. Cook stirring for 8 to 10 minutes.
  2. Add the sweet potato, cloves, and salt & pepper to taste, and the 6 cups of water. Increase heat to high and bring the mixture to a boil.
  3. Reduce heat to medium-low, and let simmer 30 to 35 minutes. Discard the cloves and let the soup stand for 15 minutes.
  4. Process the soup in batches in a food processor or blender until smooth. Season to taste, then serve.
