Sweet Potato and Star Fruit Chaat

Vegan!

Ingredients
1 pound Sweet potatoes (peeled and cut into 1/2 inch cubes)
1 Star fruit (sliced)
1 to 3 Jalapenos (or other green peppers) (finely chopped with seeds)
Juice from 1/2 of a lemon
1 teaspoon Chaat masala spice mix
1/2 teaspoon Roasted ground cumin
1/2 teaspoon Chili powder
1/8 teaspoon Kosher salt
TOPPING SUGGESTIONS INCLUDE:
Tamarind chutney
and/or mint-cilantro chutney
Chopped fresh cilantro
Pomegranate seeds

Step by Step Instructions
  1. Put the sweet potato pieces into a medium-sized saucepan and add enough cold water to cover them. Bring the water to a boil over medium-high heat.
  2. Reduce the heat to a simmer and let the sweet potatoes cook for 5 minutes to become tender. Drain the pot and put the sweet potatoes into a large bowl.
  3. Add the star fruit, jalapenos, lemon juice, chaat masala, cumin, chili powder and salt. Mix until well combined.
  4. Drizzle with chutney and top with cilantro and pomegranate seeds. Serve warm or at room temperature.
