simple potato salad

<p>Some of us folks don&#8217;t really want mustard and pickles in our potato salad so this is an alternative. Serve warm and it is excellent.</p>

Serves: serves 4 to 6 as side {depending on how many potatoes you cook}


Ingredients
4 to 6 potatoes medium to large
6 eggs hard boiled
2 to 3 cups mayonnaise
1 large onion
salt to taste
pepper to taste

Step by Step Instructions
  1. steam or boil potatoes till just done, [don't overcook or they will get mushy] boil eggs till hard boiled [approx 10 minutes after water starts to boil]. Dice the onion and steam half with the potatoes [or brown in a skillet with some butter] and reserve the other half.
  2. when potatoes and eggs are done dice the eggs and combine all ingredient including the reserved onions. salt and pepper to taste and serve while still warm.
