Vegetable Potpourri Lettuce Wraps

Ingredients
any vegetables and herbs you have around , such as carrots, beets, kohlrabi, Napa cabbage, scallions, cilantro, mint...
1 head butterhead lettuce
1 small lime (optional)
your sauce of choice (e.g., peanut sauce, hoisin sauce, soy sauce, or an Asian dressing)
rice noodles

Step by Step Instructions
  1. Cook the rice noodles according to directions.
  2. Prepare the veggies by finely shredding or chopping them. Put into individual serving bowls or in separate piles on a platter.
  3. Slice up the lime.
  4. Wash and unwrap the lettuce leaves, leaving them whole. Put out on a plate.
  5. Let everyone assemble the lettuce wrap with what they enjoy, squeezing lime over it all. Dip in a sauce and eat with your hands!
