Italian Squash Medley

Serves: Serves 2-4

4 yellow squash
4 zucchini squash
4 tomatoes, quartered
2 onions, quartered
8 oz fresh mushrooms, sliced
1 1/2 cup shredded parmesan cheese
2 Tbsp italian seasoning

Step by Step Instructions
  1. Toss all ingredients together and place in a 9- by 13-inch dish. Microwave on High until vegetables are of desired tenderness, or bake at 350 degrees until desired tenderness.
