Simple winter slaw

From South Cumberland Farmer's Market

<p>This is what I throw together when I&#8217;m craving fresh veggies in the winter and I only have a few fresh ingredients.</p>

Serves: 8 - 10
Vegan!

Ingredients
1 lb cabbage (any kind)
5 carrots
2 apples
1/4 medium onion
1/4 cup apple cider vinegar
1/4 cup vegetable oil
1/2 tsp salt
1/4 tsp black pepper

Step by Step Instructions
  1. Finely slice cabbage by hand or with a slicing attachment on a food processor.
  2. Shred carrots, onion, and apples, and toss in a bowl with the cabbage.
  3. Mix oil and vinegar, salt, and pepper, and add all at once to the vegetables.
  4. Let stand a few hours in the fridge (if you have the time) and serve cold.
