Roasted beets with Feta or blue Cheese

Ingredients
1 bunch Beets
1 Feta or Blue Cheese

Step by Step Instructions
  1. Wash beets and remove tops. Place in shallow oven safe pan with a small amount of water. ( it may be necessary to add a bit of water durning the cooking process. Keep an eye on it)
  2. Roast at 300 degrees for 3 hours ( or until tender)
  3. Allow to cool, peel the skins. Toss with either cheese and use as a salad topper or on its own. The Beets are great on there own as well.
