Sprouted Lentil Salad

Serves: 4-5 side salads
4 cup sprouted lentils
2 carrots, grated
1/4 cup sweet onion, diced
1/4 cup parsley, chopped
2 Tbsp olive oil
1/4 cup fresh lemon juice or white balsamic vinegar
3 dates, soaked in 1/4c water to soften
sea salt to taste
3 Tbsp nutritional yeast
Step by Step Instructions
- Combine lentils, carrots, onion, parsley in a bowl.
- In a blender, whiz up remaining ingredients, including date soaking water.
- Pour over vegetables, toss and chill before serving
