Kohlrabi Soup

<p>To make things a little healthier, I have substituted Canadian bacon for the bacon, and sometimes add other veggies, like broccoli. I&#8217;ve never removed the meat before serving the soup! In fact, I&#8217;ve floated some shaved cheese and bacon bits on top of the bowl before serving.</p>

Serves: 6 servings


Ingredients
1 1/2 lbs Fresh Kohlrabi, chopped
2 small carrots, chopped
4 small potatoes, chopped
7 tablespoons extra-virgin (cold pressed) olive oil
1 large White Onion
2 large garlic cloves
3 strips bacon

Step by Step Instructions
  1. Peel the kohlrabi, completely removing the tough green skin. Cut into 3/4" pieces
  2. In a soup pot, add the olive oil, Garlic, Onions, and bacon and cook quickly under medium heat for 4-5 minutes.
  3. Add the remaining ingredients, Carrots, Potatoes and Kohlrabi. Blend all the ingredients well in the soup pot. Add 2 quarts of cold water, and increase heat to a slow boil. Once soup is boiling, reduce heat to low, and cook covered for 1 hour.
  4. When finished, remove from heat, remove bacon, and flavor to your taste with salt and pepper.
