Delicata Squash with Apples and Chili Spice

Serves: Makes 4 servings
Vegan!

Ingredients
One large Delicata squash, peeled, seeded and cut into 1/2" dice
One medium Tart cooking apple, peeled, seeded and cut into 1/2" dice
One small Yellow onion peeled and diced
1/2 teaspoon each garlic powder, ground black pepper and cumin
One teaspoon each chili powder and sea salt
Two tablespoons olive oil

Step by Step Instructions
  1. In a large saucepan, bring one quart of water to boil. Add squash and parboil for 2-3 minutes. Remove from heat and place squash in a bowl of ice water to stop cooking.
  2. Heat a large skillet over medium high heat until hot. Add oil and swirl to coat the bottom of the pan, reduce heat to medium and add squash, apples and onion. Saute for 3 minutes until apples and onion begin to soften. Add spices and continue to cook until squash and apples are fork tender. Serve Immediately.
