1 bunch kale, chopped (or chard or spinach)
1/2 tsp salt
1/2 tsp pepper
1/4 cup vinegar
2 Tbsp olive oil
1 pie crust
1 cup Greek yogurt / milk / cream / half &half
1 cup cheese, grated
Step by Step Instructions
- Heat oil and cook greens with salt, pepper, and vinegar until tender. Press out extra juice.
- Mix eggs, liquids, cheese, and greens together. Pour into pie shell. Sprinkle cheese on top.
- Bake at 425 for 15-20 minutes. Reduce heat to 325-350 and bake for 30-45 minutes until firm. Enjoy!
