Simple Leg of Goat

Serves: makes 6 ~ 1/2 pound servings


Ingredients
1 4 lb. Leg of Goat
1/2 cup Lemon Juice
1/2 cup Cooking Wine
1 Tbl. Black Pepper
1 Tbl. Lemon Pepper
1-2 Tbl. Rosemary
add additional seasonings to taste

Step by Step Instructions
  1. Marinate Roast in Lemon Juice and Wine for 1 to 2 hours, or longer, turning often.
  2. Lay the Roast on a large sheet of heavy duty foil.
  3. Sprinkle both sides of the roast with seasonings. Fold the roast in half and wrap tightly in foil adding juices from the marinating container.
  4. Place on a rack in a cooking pan. Bake at 325 F for 1 hour, turn the oven down to 225 F. Cook on very low temp for about 5 hours. The roast will be very tender and have a delicious taste.
