Simple Leg of Goat

Serves: makes 6 ~ 1/2 pound servings
1 4 lb. Leg of Goat
1/2 cup Lemon Juice
1/2 cup Cooking Wine
1 Tbl. Black Pepper
1 Tbl. Lemon Pepper
1-2 Tbl. Rosemary
add additional seasonings to taste
Step by Step Instructions
- Marinate Roast in Lemon Juice and Wine for 1 to 2 hours, or longer, turning often.
- Lay the Roast on a large sheet of heavy duty foil.
- Sprinkle both sides of the roast with seasonings. Fold the roast in half and wrap tightly in foil adding juices from the marinating container.
- Place on a rack in a cooking pan. Bake at 325 F for 1 hour, turn the oven down to 225 F. Cook on very low temp for about 5 hours. The roast will be very tender and have a delicious taste.
