Greek Pizzas

<p>This is easy and quick. Perfect for a summer meal. I usually add other vegetables depending on what&#8217;s on hand. At one time or another I&#8217;ve added onion, black olives, zucchini (sliced like ribbons) Pickled pepper rings. Also, I have split the pitas in half. (Saved me a few calories)</p>

Serves: 4 but easily adjusts for more or less.
Vegetarian!

Ingredients
4 pita breads
1 cup ricotta cheese
1/2 teaspoon garlic powder or to taste, can use fresh
1 10 oz. pkg frozen spinach, thawed, squeezed dry
3 medium sliced tomatoes
3/4 cup feta cheese crumbled
1 teaspoon Slow Dog Basil

Step by Step Instructions
  1. Place pitas on baking sheet. Combine the ricotta and garlic powder and spread on pitas. Top with spinach, tomatoes, feta and basil.
  2. Bake at 400 degrees. for 12-15 minutes or until pita is lightly browned.
