Pork and Greens Soup

Serves: 6


Ingredients
3 lbs pork neckbones
1 onion, chopped
3 carrots, sliced
2 cloves garlic, minced
2 qts water
2 tsp Mediterranean Blend, Home Appetit
salt and pepper to taste
1 large bundle greens, collards, kale, mustard, turnips
2 cups white beans

Step by Step Instructions
  1. Place pork neckbones, water, salt and pepper in large pot. Bring to a boil then simmer until meat falls off the bones. Remove meat from bones and discard the bones, add the meat back into the pot. Saute the vegetables until tender then add to them to the pot along with the beans, if using them, and the seasoning blend . Let simmer for 15 minutes then add the greens, finely chopped. Stir well and serve. I let the heat wilt the greens without really cooking them.
