Stoneground Grits (cooking instructions)

From Augusta Locally Grown

Our stoneground grits should be washed before you cook them. It’s easy. Put the amount you want to cook (usually about 2 cups for my family of 4)in a large bowl. Run tap water over the grits. The “trash” will float to the top. Skim off with a tea strainer or spoon, and pour off the water. Then I do this a second time, pouring off the water again.
Put your grits in a pot with 4 cups water (for 2 cups of grits), and bring to a boil. Add salt and butter (tsp. of salt and 2 Tbsp. of butter). Put the lid on, and stir regularly. Add more water as you need it. Cook about 1 to 1 1/2 hours. The longer you cook them, the better they get. ( You have to stir and add more water while they are cooking.)
If you don’t eat them all, put in a bowl in the frig and warm up in the microwave or on the stove later (you’ll have to add a little more water). I usually cook them at night when I have more time and then can warm up the extra for breakfast.
Serve with grated cheese, sliced fresh tomatoes, or just plain as a side item with fish, shrimp, chicken, sausage, pork chops, or ham!
Vegetarian!

Strawberry and Leek Quesadillas

From Athens Locally Grown

This is hardly a recipe, but I wanted to give some ballpark measurements and hints for those who want them. Pick up the most fragrant basket of strawberries, deep red right up to the stem. Then add sauteed leeks with their subtle onion flavor, all held together by the creamy tartness from the goat cheese. It’s a ten minute snack of pure LOVELINESS.
Vegetarian!

Stuffed Patty Pan Squash With Beef & Feta

From Amory Online Farmer's Market

Elevate squash from a side dish to center stage with a fast and filling ground beef stuffing. Pattypan squash (which have a squat, round shape) can be found at many farmers’ markets in the summertime, but this savory filling works just as well with regular zucchini or yellow squash. Feta cheese and fresh dill add a Greek accent to stuffed squash. Trying to add more healthy whole grains to your family’s diet? This hearty beef-and-feta filling can be made with a variety of grains. Swap out the white rice for an equal amount of cooked brown rice, quinoa, barley, or farro.

Summer Ceviche Salad

From Athens Locally Grown

An interesting change for a summer menu, using an assertive Central and South American herb sometimes called “summer cilantro”. (You could substitute regular cilantro, but the flavor is not really the same.) A very healthy recipe, with no need to heat up the kitchen — the lime juice marinade “cooks” the fish. Only one downside — though it came from a blog that emphasizes local foods, the recipe uses supermarket fish — groan. It’s delicious, but I’m hoping that someone who is a better fisherman than I am will try this with a local, wild-caught fish such as bream or sunfish. If you do, please post your results!

Swedish Berry Cream

From Athens Locally Grown

When I visited my relatives in Sweden during the summer of 1961, I was delighted when they served this dessert. When I asked for the recipe, everyone laughed. They told me no one needs a recipe for “kram” — this was just something everyone knows how to make! However, I watched my grandmother carefully and figured it out. Here’s how it’s done. It can be made with any type of fresh berries: strawberries, raspberries, blackberries, or blueberries. They are all delicious!
