Roasted Tomatillo and Green Tomato Salsa

From CSA Farmers Market

Raw tomatillos can be chopped and added to a salad, or sprinkled on top of soup for a fresh flavor, but making them into salsas is undoubtedly their best-known use. One of our sons, always the cook who gilds the lily, came up with this version of Mexican salsa verde, and it quickly became a family favorite. The roasted vegetables take on a smoky flavor which adds a nice dimension to the spiciness. Enjoy!
Vegetarian! Vegan!

Roasted Tomatillo Salsa

From Athens Locally Grown

A slightly different take on salsa verde, the traditional Mexican “green salsa.” This recipe uses both tomatillos and green tomatoes, making a great way to use any firm little green tomatoes that may have accidentally been knocked off your plants. This is a very adaptable recipe — how hot or garlicky you make it is up to you. Roasted salsa is a wonderful accompaniment to a meal that already features other baked dishes, such as a baked summer squash casserole.
Vegetarian! Vegan!

Saute'ed Oystyer Mushrooms

From Middle Tennessee Locally Grown

Sautéed Oyster Mushrooms

Converting a mushroom hater into a mushroom enthusiast is easy when you give them a fork full of properly cooked Oyster mushrooms. The main trick is to not to undercook the mushrooms and to make sure you salt them generously. Oyster mushrooms like long and slow heat and taste best when crisped slightly.

You’ll need:
• One large cluster of Oyster mushrooms
• 1 tbsp butter
• 2 large garlic cloves minced
• 1 tbsp dried thyme
• 1 tsp of salt + more to taste
• Fresh ground black pepper
• 1 or 2 tbsp heavy cream
Step One: Mince garlic. Melt the butter in a pan over medium heat. Roughly chop Oyster mushrooms and add to pan.
Step Two: Sauté until the mushrooms release their liquid (5-10 minutes) then add the garlic, thyme, and salt.
Step Three: Sauté until all of the liquid is cooked off and continue to sauté until mushrooms crisp in the pan. Crisping will take 15-20 minutes.
Step Four: Remove from heat, deglaze pan with heavy cream and season to taste!
You can also amend the recipe by adding 1/2 cup of dry white wine when you add the garlic or by adding 1 Tbs or so of madeira when you deglaze the pan. Rosemary, sage, parsley, or lovage all make fine substitutions or additions to the thyme.

Savory Sunshine Squash Soup

From ALFN Local Food Club

I wanted something to do with leftover roasted Sunshine Squash, which is delicious on its own, but 1 squash makes a lot for a single person. I looked up various savory squash recipes and borrowed a little from several places. This is my latest version. It is very versatile based on what you have on hand. You can add white wine, cream, half and half, your favorite cheese, leftover cooked veggies, roasted celery, a roasted apple or two, etc.

There are wonderful-looking recipes for sweet Sunshine Soup on the web.

Sell Farm's Cubed Steak Parmesan

From Mid-Georgia

One pound Sell Farm Cube Steak. Fix a frying pan using olive oil and heat. Coat Steak with Egg Beaters – we use this because it is low fat and low calorie. Coat again with a mix of a heaping cup of Progresso Italian Bread Crumbs to which you added in a good portion of grated Kraft Parmesan cheese plus a generous pinch (or more) of garlic powder, basil and oregano. In a fixed pan place olive oil and gently fry the steaks until medium to well done – note some of the bread crumbs will fall off in the turning process or stick to the pan — just scrape them off (as long as not burnt) and use as a topping. Salt and pepper to taste at the table. Bon Appetite!

Sell Farm's Heavenly Herb Cubed Steak

From Mid-Georgia

Sell Farm’s Heavenly Herbed Cubed Steak

(amount of ingredients is for 1 lb of meat, adjust accordingly)

Place 4 Tbsp of virgin olive oil in a skillet, add 1/4 tsp of crumbled sage, 1/4 tsp of cracked rosemary, mix together. Place one pound of defrosted Sell Farm cube steak in the skillet and turn the meat over so both sides are coated with the mix. Cover and let stand for 30-45 minutes.

Cook over medium-high heat until the meat is medium rare, turn frequently. Remove the meat and place on a warm plate.

Add 1-2 Tbsp of extra virgin olive oil and 2-3 Tbsp of butter in a pan over low-medium heat and allow butter to melt. Add crushed garlic (2-3 cloves, we like much more), desired amount of crushed red pepper and the juice from 1/2 of lemon, stir over heat until it begins to simmer; then spoon over the meat.

Salt and pepper to taste at the table.

Serve hot with Couscous and a green salad.

This works equally well with chicken breasts. Elsa slices the skinless breast so that they are thin. Pounds them with a meat mallet and then prepares as above. Yummy.

SHH "Paella" Fried Rice

From Champaign, OH

Remember you absolutely cannot make delicious rice using freshly cooked rice.Cook the rice a day or 2 ahead of making this recipe. Use a long grain rice and cook according to directions on the package. You will need 4 cups of cold cooked rice. You could also purchase the cooked rice from a chinese restaurant.

The chorizo sausage is hard to find. Oakview Farms carry ground chorizo in a 1 lb. pkg. I the whole pkg. I have also substituted the chorizo for ground sweet Italian Sausage. However you do not get the same flavor or color that the spices of the chorizo gives to the dish.

SHH Irish Soda Bread

From Champaign, OH

This is a salute to Nana! Marie Abigail O’Reilly Stapleton AKA Nana. Happy St. Patrick’s Day. The first thing Irish my husbands mother showed me how to bake was Irish Soda Bread. Her bread was from scratch and baked on a flat skillet in the oven. A loaf was always sitting on her kitchen table waiting for us to slice it up smother it in butter and savor the goodness and love with which it was baked. I bake Irish soda Bread especially on St. Patrick’s Day but over the years I have taken a short cut from her original recipe. Back when I was a busy working mom and busy children. This is my Bisquick Recipe Version. Enjoy
